Paleo - Coconut Almond No Bake Cookies


Since I have gone Paleo I have so many people ask me what I eat. Honestly I eat alot, it is just all really clean. Here is one of my favorite cookie recipes. Simple to make with just a few ingredients, and before you say "I hate coconut" try using unsweetened just one time, the taste is very different, in a good way.
I have made these cookies a couple of different ways depending on what nuts I have available. In true Paleo style I usually always try to add some protien to any sweet I am having.

Ingredients: 
1 cup Unsweetened Coconut Flakes
1 Tablespoon Almond Butter
2 ozs of Slivered Almonds
1/4 cup Pure Maple Syrup
3 Tablespoons of Baking Cocoa 
Directions:
Mix all ingredients in pan on low on the stovetop, stir about 5 minutes then drop into spoonfuls onto wax papers to cool and firm up. They do not get hard like regular drop cookies. I store in an air tight container with wax paper in between.
They are so yummy!! Enjoy!!

I've Gone Paleo....

When I decided to try eating the Paleo Lifestyle (some say diet but for me now its a lifestyle) in May I never expected to blog about it, but here goes....
So about the first of May this year I decided to go Paleo, I needed to lose weight and start eating better my blood sugar was running high and so was my blood pressure. I did not want to have to start taking a bunch of medicine to control it if I did not have to so I figured a total change was in order. If you are not familar with Paleo it is called the "Cave Man" Diet. I jumped in and pretty much have not looked back.
All that being said and 60 lbs later I have decied to share some recipes, tips and things I have learned.
So first of all, did you get that in 6 months I've lost 60 lbs. I feel alot better, have more energy and I sleep better at night.
Now for the good stuff, when I decided to give this a try  I googled Paleo and tons of stuff came up. Lots of recipes and guide lines on what you can and can not eat. So basically you can eat meat, veggies, most fruits and nuts. You avoid dairy, sugars, starches, and processed foods. And maybe most importantly drink water and lots of it. I try and drink about a gallon a day. I used My Fitness Pal to track what I was eating and drinking and my excerise.
I try to eat about 75 grams of protien per day. Since I am following Paleo and sugars and carbs are not Paleo I do not worry about them. I just do not have them. In the beginning Nuts (Almonds and cashews no peanuts they are not really a nut and not Paleo) and pumpkin seeds were pretty much my snacks sometimes I would eat some almond butter and a square of a 90 % pure chocolate bar. But in the last 6 weeks or so I have really started to branch out.
I try and walk no less than 30 minutes a day everyday and about 3 days a weeks I do about 20 minutes of low impact Zumba. I am not a big exerciser. I never have been but I will say now when I walk I do feel good and it does give me energy.
So about what I cook and try to eat...  
A typical breakfast is some cooked bacon and an egg with some onions, peppers, and spinach cooked in.
Lunch is usually a packet of tuna, some diced tomato, and some diced zucchini, yellow squash, or carrots.
Dinner is some type of cooked meat and more veggies.

My first recipe to share (I have seen this several places and I have no idea who to give credit to but I did not come up with this one on my own) ....

Broiled Steak Rolls 
Flank Steak or Thin Sliced Sirloin ( I really try and pound it out to get it pretty thin)
Marinade:
1/4 cup soy sauce 
1/4 cup worcestershire sauce
1/2 cup water
Ground pepper to taste
Filling:  
1 Zucchini and/or 1 yellow squash, and/or 1 carrots cut into matchsticks
1/2 Bell Pepper Cut into Matchsticks
1/4 Onion Cut into matchsticks

 Directions:
 Pound steak and marinate while preparing veggies. Slice your veggies matchstick style to fit into your steak rolls. I usually have more veggies than will fit and I just serve them as my side dish. Saute your veggies for about 5 minutes with 2 tablespoons of your marinade, just to get them to soften.
Remove your steak from your marinade and spoon your softened veggies lengthwise onto your steak. Roll your steak and secure with a toothpick.
Broil on low about 5 minutes turning once. Be careful not to over cook the steak. It is so thin the meat will get tough. 
Serve and enjoy.

A Little Halloween Fun

Wanted to share my daughters Halloween costumes this year...


Oldest daughter was a strawberry for the Occupational Therapy‬ Orientation her class hosted this year. 


Middle daughter was Mild Sauce for softball workouts on Friday


And a gumball machine when she went out with friends on Saturday.

No picture of youngest daughter on Halloween this year, she was more interested in deer hunting than anything else. Guess I should have snapped a picture of her all in camo.
